It’s the New Year!  And now that we’ve climbed out of the abyss of the week between Christmas and New Year’s, we are ready to tackle 2021.  Don’t be in a dinner rut – we’ve got plenty of recipes to mix it up in the kitchen.

Sunday – Chicken Salad Sandwich

Chicken sammies are a household favorite – and I like to switch it up with a little chicken salad.  This is a classic recipe that you can customize.  Of course, I serve these on Hawaiian rolls, because those are delicious!

Monday – Hot Dogs

My kids love hot dogs, and to be honest I do too!  They’re easy to make and crowd pleaser.  Just trying to ease into the week!

Tuesday – Unstuffed Spicy Tomato Basil Shells With Whipped Ricotta

Did someone say, Whipped Ricotta?!  Oh yes, they did! And while this recipe may take a little bit longer to make it is definitely worth it!  And the ricotta, I mean it’s drool worthy!

Wednesday – Cheddar Ranch Chicken Burger

Since I have Hawaiian rolls, why not use them again?  This simple recipe will be a fam favorite and someday when you can host a party again these would be a perfect slider for any party!

Thursday – Sweet + Tangy Asian Meatballs

I love all Asian flavors and this recipe can be served with stir fry veggies over rice or however you’d like to serve them!

Friday – Homemade Pizza

Yes, we do this every week.  And no it most likely won’t change. Here’s the dough we use from the Pioneer Woman. I use whatever tomato sauce we happen to have lying around, BUT if I’m being super gourmet I will buy the pizza sauce from Trader Joe’s AND their Pizza seasoned shredded cheese.

Saturday – Vegan Crunchwrap Supreme

Trying something new is what I’m committed to do in 2021 – because why not?! So, I’m making a vegan Mexican dish – and turns out it’s SO good!  This recipe can be made vegan or traditionally! Enoy!
