I don’t know about you, but I feel like the week after a major holiday my body is saying – EAT MORE VEGETABLES.  Like, for reals.  SO – this week it’s going to be more veggies and a little less cream. Everything in moderation, right?!

Sunday – Spinach Salad

This is truly one of my favorites.  I add rotisserie chicken, tomatoes, avocado, shredded parmesan cheese, and Trader Joe’s croutons.  Use your favorite dressing or keep it light with olive oil and vinegar!

Monday – Cilantro Lime Chicken + Air Fryer Cauliflower

This chicken is SO flipping good – and I add the entire bunch of cilantro – so if you don’t like cilantro do not eat this! Putting any and all veggies in the air fryer cooks them perfectly!

Tuesday – Chicken Wraps

This is super easy and is almost exactly what we ate on Sunday – I just repurpose the rotisserie chicken, add some cheese, orange zest, salsa, black beans, and avocado on a spinach wrap – you can also add some spinach to this wrap – pan-fry until the wrap is golden brown on each side – I don’t use anything in the pan as far as butter or oil.

Wednesday – Creamy Buffalo Chicken Casserole

I love this recipe because it’s easy and it’s also pretty healthy! Add some air fryer broccoli as a side and you’ve got a well-balanced meal everyone will love!

Thursday – Quinoa Power Bowls

Lots of veggies in this recipe and still delicious! The mix of maple and chipotle is so good!

Friday – Homemade Pizza

Yes, we do this every week.  And no it most likely won’t change. Here’s the dough we use from the Pioneer Woman. I use whatever tomato sauce we happen to have lying around, BUT if I’m being super gourmet I will buy the pizza sauce from Trader Joe’s AND their Pizza seasoned shredded cheese.

Saturday – Veggie Quesadillas

Spice up your general quesadilla with some black beans and sweet potatoes!  Honestly, I’ve been trying really hard to eat more beans and they taste delicious in this quesadilla!
