This week is filled with some fun takes on old recipes.  As I always tell my kids, try it first before you decide you don’t like it!  So, with that in mind – enjoy this week’s menu ideas!

Sunday – Enchiladas with Red Sauce

I must admit that I love enchiladas, but I’m not the best at making them.  Thankfully, this recipe is really easy and also delicious!

Monday – Easy Chicken Fried Rice

Did you like how it says EASY? Yeah, me too!  My kids love rice and adding a simple protein like chicken completed the meal.  I also love that this recipe can be made in bulk and kept for leftovers for easy weekday lunches.

Tuesday – Cheeseburger Quesadillas

You guys, if you haven’t tried this you NEED to try this! You’re going to love the special sauce for dipping!  And the best part is that your kids will love this recipe too.

Wednesday – Chicken Spaghetti Casserole

Another casserole recipe for the win! Sometimes you just need a recipe that is comfort food combined with ease and this one is just it! I especially love being able to throw everything in one pan and bake it.

Thursday – Dr. Pepper Pulled Pork Sandwiches

I wasn’t sure about Dr. Pepper in my pulled pork, but I must say this recipe has made me a convert!  You can save the pulled pork for Nachos or quesadillas!

Friday – Homemade Pizza

Yes, we do this every week.  And no it most likely won’t change. Here’s the dough we use from the Pioneer Woman. I use whatever tomato sauce we happen to have lying around, BUT if I’m being super gourmet I will buy the pizza sauce from Trader Joe’s AND their Pizza seasoned shredded cheese.

Saturday – Greek Salad

Greek salad with homemade dressing?  Yes, please!  This recipe is easy and delicious. A perfect Saturday evening dinner.
