The weather warmed up a bit this week and that made me want to make a few things that didn’t require a lot of bak

Sunday – Caprese Risotto

Oh man, I love risotto but I often forget to have it on rotation!  So, this Caprese inspired recipe hits the spot!  The other thing I love is that I can throw in veggies so easily with risotto!

Monday – Crockpot Ranch Pork Chops + Potatoes

One pot for the meal? Yes, please!  This recipe is easy and yes it truly is a set it and forget it kind – the kind I love!

Tuesday – Korean Beef Bowls

You guys, my kids are obsessed with steak.  And I may or may not have told them that hamburger was steak….I mean it is a little right?  So these beef bowls are a total crowd pleaser!

Wednesday – Cheeseburger Sliders

My kids love beef…but I secretly use ground turkey for this!  Don’t tell them.  And I also love any excuse to buy Hawaiian rolls because they are so flipping amazing!

Thursday – Meat Sauce Pasta With Burrata

Hello, you had me at Burrata!  I could probably eat my own weight in burrata and that is saying something!  So enjoy this slow-cooked meal!

Friday – Homemade Pizza

Yes, we do this every week.  And no it most likely won’t change. Here’s the dough we use from the Pioneer Woman. I use whatever tomato sauce we happen to have laying around, BUT if I’m being super gourmet I will buy the pizza sauce from Trader Joe’s AND their Pizza seasoned shredded cheese.

Saturday – Skillet Chicken + Potatoes

Another one-pan meal, yes, please!  This recipe is simple and obviously, you can customize the sides to fit your palette!
