It’s finally SWEATER WEATHER!  This definitely means that this week’s menu is going to be full of comfort food.  Because all we want to do is snuggle up in some cozy jammie jams and enjoy this amazing cooldown!

Sunday – Pot Pie

Oh, this is GOOD!  I use chicken, the recipe calls for leftover turkey.  If you don’t make it this week, make it after Thanksgiving and use your leftover turkey as she suggests.  I have made the homemade crust and also just picked up crust from Trader Joe’s.  Either way it’s still amazeballs.

Monday – Lasagna

You can make your own – OR you can be like me and grab a frozen one from Trader Joe’s. They have a veggie option or a meat option. I generally pair this with some salad and garlic bread.  Both premade because that’s how I roll these days 😉

Tuesday – Baked Potato Bar

I like to make baked potatoes in my instant pot!  And this is a great resource for cooking times. And then I use what I’ve got for the toppings!  Sometimes it’s chicken from a leftover Rotisserie Chicken, sometimes it’s leftover taco meat – or I got all veggie and roast some broccoli.  Or I really get crazy and make bacon bits!  There’s always cheese and it’s always delicious.

Wednesday – Chicken and Wild Rice Soup

This recipe is a copycat of the Panera recipe which is super delicious. I will usually make some homemade bread to go along with this because you always need something to dip into this soup!

Thursday – Stir Fry

I’ll admit I’m not always the best at getting veggies in every single meal.  The thing I love about Stir Fry is that it’s just a ton of veggies in a delicious sauce and that makes me feel like I’m WINNING!  I like this recipe for Stir Fry – and remember you can always take the chicken out and just pour it all over some rice!

Friday – Homemade Pizza

Yes, we do this every week.  And no it most likely won’t change. Here’s the dough we use from the Pioneer Woman. I use whatever tomato sauce we happen to have lying around, BUT if I’m being super gourmet I will buy the pizza sauce from Trader Joe’s AND their Pizza seasoned shredded cheese.

Saturday – Chicken Fajita Pasta

Obviously, I love Fajitas, and then it’s also obvious I love pasta so why not combine them?! This recipe is super easy and also gives a twist on both the fajita and pasta!
