So what’s on the menu this week?  Do you have a hard time figuring it out?  Yeah, so do we! But – hey we are moms and we have to get that dinner on the table, am I right?!

So enjoy this week’s menu ideas and we hope that they help make your life a little easier because we are moms and we need a little ease in our lives!

Fajitas and Pasta, oh my!  This recipe is truly one of my favorites!  It’s a little spicy and a little creamy and super delicious.  Of course, I can pick out all of the veggies for my kids because ya know, they only eat boring pasta!

Monday – Meatloaf Patty Melts

Sometimes I see something and I’m like yes, I need to make that! So this recipe is simple and also just hits the spot.

Tuesday – Mexican Sweet Corn Salad With Rotisserie Chicken

Who else LOVES Mexican Sweet Corn?!  Is it just me? Can’t be.  This recipe is just delicious and also I add rotisserie chicken so it beefs it up a bit and keeps everyone happy!  You can eat with tortillas or chips or just by itself.

Wednesday – Bang Bang Shrimp

Big fam favorite here!  This recipe will be a hit and most likely your kids will keep coming back for more!

Thursday – Homemade Corn Dogs

My child could eat corn dogs every single day of the week. So I gave in and made these.  Because I’m just trying to make everyone happy right now!  Try this recipe if you’re like me!

Friday – Homemade Pizza

Yes, we do this every week.  And no it most likely won’t change. Here’s the dough we use from the Pioneer Woman. I use whatever tomato sauce we happen to have laying around, BUT if I’m being super gourmet I will buy the pizza sauce from Trader Joe’s AND their Pizza seasoned shredded cheese.

Saturday – Sweet Potato and Black Bean Empanadas

I love empanadas.  Just LOVE them.  And this recipe will make you love them even more – and the BEST part is you can either buy frozen empanadas discs OR you can make them yourself…the choice is up to you!
